The common layer found between the adjacent cells is known as the middle lamellae. The pectin is the compound found in the middle lamellae. The proteolysis enzyme can dissolve the pectin and can separate the two cells. The natural cell loosening occurs during the fruit ripening which is due to the dissolution of the pectin present in the middle lamellae.
