The enzymes which are able recognize specific foreign DNA sequences and can cut the DNA duplex within the recognition site or little away from and producing discrete DNA fragments is called as the restrictase. It is also known as the cutting enzymes, it acts as a molecular scissors as it cuts the DNA into fragments.
