Large amount of Carbon Dioxide (CO2) is produced by the bacteria Propionibacterium shermanii by utilizing Lactic acid produced by the bacteria present starter culture. This Carbon dioxide forms bubbles in the cheese and are stored in small pockets while lead to the formation of large holes or ‘the eyes’ of the Swiss cheese.
